This process works by 'evaporative cooling' see:

and works well if conditions are right i.e sunny and humidity is correct

This was the 'old fashioned' method of keeping milk cool (but not chilled) I believe.

You may need a couple of mates to help get it through the turnstyle however it does make 5 tons a day.
