You favourite Pancake toppings?

Up till about 10 years ago the only thing I`d ever had on a Pancake was sugar and lemon juice , golden syrup or sometimes jam.

But, when going to Krautistan.. i then saw that they were putting all manner of shite on em..including savoury...which I still cant get used to.

I do like a festival treat now though with a Crepe containing strawberries/chocolate/cream etc.

But tonight, if i can borrow an egg.. I shall honour me Mam and have it like she used to do em with Golden Syrup.

If we're talking sweets, then it's lemon and sugar all the way for me. Do like savoury ones though, chilli being a particular favourite. Looking forward to our annual pancake eating competition, las t year we went through 6 pints of batter.

What are the thought on the pancake batter - I prefer to use self-raising rather than plain flour and you get a 'fluffier' pancake that's risen a bit (bit like a scotch pancake i guess) that way. But some pancake purists think that's heresy.

Sultanas with lemon and caster sugar.

Put the sultanas in straight after the batter so they sink in a bit. After flipping you may need to press down with a spatula as the sultanas can stop the batter from making contact with the pan.

Best if said sultanas get little bit of burniness on them.

Roll up and sprinkle with lemon THEN the sugar.

Easily one of my favourite comfort foods & fantastic with ice cream.

The Hairy Bikers’ banana pancakes make a brilliant brunch or simple supper. Omit the bacon if you wish.

Ingredients

55g/2oz butter, cubed

275g/9¾oz self–raising flour

1 tsp baking powder

2 free-range eggs

2 tbsp soft light brown sugar

300ml/½ pint whole milk

1 large banana, roughly chopped

1-2 tbsp sunflower oil

8 rashers rindless streaky bacon

maple or golden syrup, to serve

Preparation method

1.Preheat the oven to 110C/225F/Gas ¼.

2.Melt 25g/1oz of the butter in a small pan over a low heat and leave to cool for five minutes.

3.Put the melted butter, flour, baking powder, eggs, sugar and milk in a food processor and blend until smooth.

4.Pour into a large bowl and mash the banana into the batter with a potato masher.

5.Melt a little of the oil with a cube of butter in a large non-stick frying pan over a medium heat. Wipe around the base of the pan with a thick wad of kitchen paper.

6.Drop four large serving spoonfuls of the banana pancake mixture into the frying pan, spacing well apart. Cook for three minutes, or until the pancakes rise, bubbles appear and the surface appears dry.

7.Flip over with a palette knife and cook on the other side for a further 2-3 minutes, or until pale golden-brown.

8.Transfer to a heatproof plate and keep warm in the oven while you cook the remaining eight pancakes in exactly the same way.

9.Return the frying pan to the heat and add the streaky bacon. Cook for about three minutes on each side until golden and crisp, turning once. Add a splash of oil if the rashers begin to stick.

10.Pile the pancakes onto four warmed plates and top with the fried bacon. Drizzle with a little maple syrup (or golden syrup) and serve the rest separately.

i tryed this 1 the other day, i would add extra sugar and maybe 1 extra banana. i didn't enjoy the savory part (the bacon) next time i will try it with out.

To make a boat-load of pancakes:

4oz/110g plain flour

pinch salt

2 large eggs (room temp)

7fl oz/200ml milk mixed with 3fl oz/75ml water (room temp)

2 tbs melted butter plus bit extra.

milt*

Seive the flour and salt into a large bowl putting as much air into the mix as poss by holding the seive high. Make a well in the middle and bust the 2 eggs into it.

Start to whisk the eggs (electric/manual/fork) and then begin to incorporate the flour and gradually add the milk/water mix. Make sure you get all the bits of flour mixed in and whisk until the consistency is like thin cream.

No need to let this batter stand like some people advocate. Just before yer ready to cook em..add the 2 tbs of melted butter and mix.

Now--this bit is important for any novices.. do not use too much butter for cooking

The pan just needs to be coated..the pancakes are not cooked in the butter.

So put the lightest coating of butter in yer pan,get the pan hot and turn heat to medium.

Put 2TBS of batter into the pan and tip the pan to get the base evenly coated. Should be done after 30-60seconds--unless you`ve put more batter in and yer pancake is much thicker.

Whilst the pancake is cooking.. the tradition is to play with your sexual organs in the most intruiging way imaginable.

Either toss the pancake or slide it out of the pan with a spatula and spread with milt or a filling of your choice.

Remember to keep the pan hot and just-a-say coated with butter.

Enjoy. I think the additional practice mentioned above really does make the difference but goes without saying--this method is for adults only.. so Me Likkle Amps may have to just stick with Ma Broon and her battered apples :)

* milt is readily available in most non-catholic homes with males over the age of 11 yrs. If you cant find any, I can provide Mail Order Milt (£6.95 per 50ml plus PP). This is a quality mature milt with a creamy texture and slightly salted aftertaste. Non-Organic

Lemon and sugar for me. But if I could, then it'd definitely be New York cheesecake flavoured pancakes with strawberries, strawberry sauce and cream on top from IHOP in America.

Well, I`ve had mine. I halved the recipe I posted and dispatched with the 2 more perverse notions which I feel are not best applied when yer on yer own! :O

I had 3-- with Golden Syrup on--and must say, well yer bugger-a-hell-- they were pretty good. As light as a dole-wallers wallet and as pretty as Alys Fowler!!!

Full as a gun now... so its a bit of a rest, then hit the vodka for a Bday glug!
