One answer to mud (well not an answer but helps reduce [possible problems) if to use a site that has some sort of existing infrastructure - for example Wychwood, which uses Cheltenham Racecourse where they've got concrete hardstandings, toilet and shower blocks. Obviously you have to supplement their basics.

The Cambridge Rock Festival used the Wood Green Animal Shelter, which has an indoor arena, for a couple of years.
