grated cheese with peas, pie and gravy sounds incredible to me. I'd like to echo Quark's pie assertions, as they're all crucial in determining good pie quality. As important as the filling is (and it really is, of course) for me it often comes down to the pastry. The fine denizens of Piglet's Pantry make for me the best pies around - they are literally the only reason for me to go and watch Brighton games when my mates have spare tickets. (I don't support them, they're developed an infuriating habit of beating Spurs, and its not all that exciting to watch their football - tidy, with no real penetration, its an hour and a half of foreplay) but the pies at Brighton are magnificent. Its the absolute highlight of the trip. Their secret, and im not blowing it for anyone here, is that they incorporate herbs into their pastry, making it a rich, buttery, delicious delight. Even the nominally dry last corner that has hardly any filling in is absolutely delicious. 

Theyre good at veggie fillings too - they did a great veg balti pie, and the curried butternut squash pie is absolutely excellent. So if you want an amazing pie, go and bother Piglet's Pantry. they do home deliveries! 

We got some executive tickets for a cup game a couple of years ago for my mate's birthday, and with access to the posh facilities post-match we somehow got chatting to the pie fellas after the match, who were keen on getting rid of all their produce before going home. So the four of us who went got a box of sixteen pies for £16 to eat on the train home! 

 

did we?

An amazing pie has to tick all of the boxes, no easy feat.  The pastry has to be baked to perfection, enough of a bite to it to retain structural integrity but not so much that it becomes dry.  A total crust as well, none of this tin bowl with a pastry lid nonsense.  The filling should be just that, filling. No huge air gaps inside the pie, but equally not bursting out of the sides. Depending on your filling of choice it should be tasty (obviously) with a good mix of textures. Pieces should be large enough that it doesn't all blend together, but not so big that you only get a few bits to a pie. Enough gravy / sauce to maintain moisture and not make it a dry meal, but not so much that it becomes a stew, destroys the pastry and swamps the plate.

An amazing pie is a thing of beauty, and suitably rare.

 

I'm hungry now. 

I did get the Hair Bikers book of Pies for Christmas but yet to embark on the Pie cook trail yet. Probably an Autumn project to get into pies

Personally if I was going to have cheese I'd rather have it incorporated into the mash. Personal preference though.

And that's prime work on the train journey. Cap doffed.

Back from a cracking afternoon tea experience, celebrating our daughter's 30th, out again this evening, twice in one day, amazing scenes.

Loving the pie pics and dits on here, things we use to take for granted feel like an absolute treat atm; excellent stuff 👍😎

That explains quite a bit. I mentioned that I'd had very good pie's in an earlier post. Both of those pies happened to have been Pieminster pies. They were both in the reduced section of my local Coop, which kind of 'allowed' me to buy them. They're probably not that expensive, but I'm kind of hooked on the reduced sections of various supermarkets.

These are all acceptable answers. Cheese wouldn't be my choice, but if that's how it came I'd certainly not send it back.

Excellent stuff … those needles are so tiny … I felt them even less that my daily jabs … as an aside I’ve fainted twice with needles before  … once for my school bcg and it seemed the whole school knew within minutes … and once when I was having regular bloods done when I was asked if it was ok if a particularly attractive student nurse watched …   Oh dear 🙂

Did you feign the second fainting so that the attractive nurse could come to your aid?
