Campervan + 2 small tents

How strict are they on the 1 tent per van rule in the campervan fields? Do you think I'd get away with pitching a second small tent next to a van on Wednesday evening?

I think you'll be OK if tents aren't too large.

Last year we had two vans with large awnings facing each other, a large four person tent and a toilet tent. Not a problem.

Stewards seem to be mostly concerned with keeping the fire lanes clear.

Yeah you’ll be fine. Just tell them you have an awning and a tent when they park you up so that they know to leave enough space between you and the people either side of you.
