speak to hannah who runs all the traders and she'll be happy to help and give some advice.

we're always keen to see new traders but tell your friend that its more costly that you think. food, power, fuel, staffing costs etc are really high.

also need to remember that doing a small number of shows is hard to make work as you can have some high equipment outlays, so you'll need a few shows to make it work financially and even then like any business involving food its very competetive.

most importantly and to avoid a big outlay, you need something that quick to make and doesnt take a lot of prep, storage and staff.

id have a look at how some of the stalls in the highland food village do it. small indie operators serving really good fresh food but they have fairly low costs.

dont chase big shows. the fees are incredible high (hence why its mostly burger vans). concentrate on smaller indie shows.
