Who is the 3rd headliner likely to be?

Not really. Paramore aren't considered headliners anywhere in the world, so you don't have to worry about booking someone that they respect enough above them to drop to a sub slot, a sub slot is the best they'd be offered.

Granted I may be reading too much into it, but between Serj and Daron I can't see the egos accepting a sub slot to anyone outside of a real behemoth, which Blur do not qualify as.

I think the SOAD/Blur thing comes down to that guy from SOAD saying/suggesting that they accepted the offer to sub due to the band that they would be playing under and that they are looking forward to having fun with this band.

Yes Blur are big enough and yes they have subs/headliners of different genres but in this particualr case I don't think Blur would really fit into what the guy from SOAD said. Then again I don't know if there is a Blur/SOAD relationship or that SOAD would get particularly excited about subbing, but it seems like a situation that would lean more towards a band more similar to SOAD and more legendary in status.

I think that's what Lithium meant by behemoth, someone like Sabbath who are legendary rock Gods who SOAD are more likely to look up to.

I think I remember reading the quote in question (if someone could post it again it would be appreciated), and I could be wrong, but don't recall them specifically stating that they are 'under the 3rd un-named headliner'. I thought it just said 'we know who the 3rd headliner is'.

So they didn't specifically state that they are definitely playing under the final headliner.

They also said "We had a great offer" - i.e. were paid a lot of money.

They probably are playing on the same day, but it's not categorical proof. For example, they could be playing on the Friday at Leeds and then hang around until Saturday to meet the mystery act, before heading off to play Reading on Sunday.

Correct. Or failing that, at least an internationally recognisable act that they're likely to have played with before (Green Day).
