Well, if you're wanting to be all Cornish about it, you should be using Cornish splits, not scones. If you're using scones, it's a Devonshire cream tea, not a Cornish one, so the cream should go on first

impossible... have you ever tried putting  some jam on copious amounts of cream? its just not practical

Moisture is key to a good sandwich. People that dont use butter weird me out.
